Ellie Jean Coffey’s Acai Breakfast Bowl Recipe
It takes a lot to fuel Ellie Jean Coffey, the bubbly competitive Billabong surfer known as much for her sun-kissed good looks (she was named one of the “Hottest Girls in Pro Surfing” by Transworld Surf last year) as her pro title accomplishments. The Gold Coast, Australia, recently nabbed the 2013 ASP (Association of Surfing Professionals) Australasia Pro Junior Series Championship, tipping the scale for her place in the ASP 6-Star World Tour events next year. With a heavy training schedule on the horizon, what does a professional water woman reach for in the morning to keep up her energy? As it turns out, Coffey has her breakfast down to a science—and one she’s willing to share: “This is my acai breakfast recipe,” says Coffeey of this super-food-packed breakfast, “I have this each morning.”
– Two frozen acai berry packets
-Handful of fresh or frozen mango chunks, blueberries and raspberries
-1 cup natural, low-fat yogurt
-2 mandarin oranges
-1/2 cup organic museli
Place the frozen acai berries, mango, blueberries, raspberries, yogurt, bananas and oranges in a blender and blend until smooth.
Fill half of a bowl with the blended acai mix. Top with organic museli.
Sprinkle chopped strawberries and blueberries on top. Enjoy!
